Vanilla Planifolia.
I know I've told you before about my super cool clients. One of them is originally from Papua New Guinea, and her family has an organic vanilla plantation there. She recently sent me these samples, which I'll be using in her wedding cake.

The beans are beautiful, and the paste and extract are both incredibly fragrant and rich. I was hoping to use the pods in the cake design, but we've come up with something a little too refined to incorporate them. It will be amazingly pretty and delicate, so I'm happy to settle for having the vanilla on the inside.
